Peach Curry Chicken Salad (The BEST One-Serving Lunch!)

Do you enjoy a good chicken salad? I do! To tell you the truth though, I honestly never thought that I would say that. A few years ago, I would have told you that chicken salad was gross because it was all mayonnaise-y. That was before I figured out that chicken salad wasn’t all the plain and boring! Chicken salad is basically a blank canvas, which is how I came up with this flavorful Peach Curry Chicken Salad!

Tips for Peach Curry Chicken Salad

When I have leftover leftover cooked chicken, I used the breast meat for this peach curry chicken salad.

If you prefer to use canned chicken, feel free! Just try to find the low sodium ones because they tend to be reallllllly salty. Honestly even the low sodium ones have a pretty strong salt flavor.

Rotisserie chicken is another great option because it’s so tasty and no cooking on your part!

I still would recommend using the breast meat for this salad. It’s lower in saturated fat (yay heart health!) but also since it may be on the dry side when it’s reheated, you may prefer it with the nice creamy dressing!

Do you prefer to eat vegetarian meals (or can’t find chicken near you)?

You could use chickpeas in place of the chicken.

Fair warning: I didn’t try this with chickpeas, but if you do, let me know how it goes! I really should try this soon. Maybe that’s what I’ll do for lunch today! I’m pretty sure I have a can of chickpeas laying around here somewhere!

Ingredients

Salad Ingredients

  • 3 oz cooked chicken breast
  • 3 Tbsp chopped peaches
  • 1 Tbsp walnuts or pecans chopped
  • 1 Tbsp green onion thinly sliced
  • 1 tsp curry powder
  • 2-3 Tbsp plain Greek yogurt nonfat

Optional Mix-Ins and Accompaniments

  • lettuce
  • onions diced
  • jalapeno diced
  • whole grain crackers
  • whole grain pita or flatbread
  • croissant

Instructions

  • Add all salad ingredients to small mixing bowl. Toss to combine.
  • If using any additional mix-ins, add them and mix. If using accompaniments, prepare and serve immediately!

  • Calorie information based on using nonfat plain Greek yogurt. Nutrition information may vary based on ingredients selected.
  • This is a great way to use up some leftover rotisserie, baked, or grilled chicken!
  • Curry powder can stain plastic. Be sure to mix in a glass bowl or wash plastic immediately.
